Cider Braised Pork Cheek
“ We braise our pork cheeks in a local cider and pair it with a pickled apple tart Tatin. We use a pastry technique in the savory kitchen because the combination of apples and pork is a classic but also because the technique may not have been seen before. We drive home the savory notes by pairing the dish with roasted onions, sweet onion puree and a mousse made out of local cheese curds that we smoke in house.”

Sunflower and apple Risotto
“ I once watched someone do a risotto using seeds and I have been wanting to do it for some time now. Being a Canadian restaurant and with it being fall I wanted to bring in sunflower seeds and pair it with apples, Riesling and foie gras. We make a risotto out of only sunflower seeds (no rice), sunchoke puree, pickled apples and finish it with foie gras that we have marinated in Riesling to tie it all together.”
